- ½ cup unsalted butter
- 2 tablespoons of olive oil
- 4 cups chopped onion
- 5 cups beef broth
- 2 tablespoons dry sherry (or even white wine)
- 1 teaspoon dried thyme
- 1 pinch of salt and pepper to taste
- 4 slices of French bread
- 4 slices of provolone cheese
- 2 slices Swiss cheese, diced
- ¼ cup grated Parmesan
Instructions
1. Gather all the ingredients.
2. Melt the butter with the olive oil in an 8-quart saucepan over medium heat. Add the onion to the butter and stir constantly until softened and translucent. Do not fry the onion.
3. Add beef stock, sherry and thyme. Season with salt and pepper. Let them boil for 30 minutes.
Meanwhile, preheat the oven’s cauldron.
4. Ladle the soup into oven-safe bowls and place a slice of bread on top of each (the bread can be broken into pieces if you prefer). Top each slice of bread with a slice of provolone, 1/2 slice of Swiss chard, and 1 tablespoon of Parmesan cheese.
5. Place the bowls and bake in the preheated oven until the cheese is bubbly and lightly browned, 2 to 3 minutes.
